Two knives, most of the work. The Ruri Duo pairs the two blades a kitchen leans on hardest, each from a stainless steel core folded in layers of tsuchime-hammered Damascus.

The Kiritsuke is the chef-slicer, an 8-inch blade with an angled tip for clean slicing and confident chopping. The Santoku is the all-round blade, a 7-inch knife that slices, dices and chops behind a rounded tip.
