POKE BOWL – 3 Oct 2026

In this cooking demonstration, Chef Duncan will prepare a vibrant and flavorful Marinated Tuna Poke Bowl, showcasing fresh ingredients, bold international flavors, colorful vegetables, and contrasting textures.

Chef Duncan begins by preparing the marinated tuna. Fresh sushi-grade tuna is cut into bite-sized cubes and gently tossed in a savory marinade, allowing the fish to absorb the seasoning while maintaining its clean, fresh flavor and delicate texture.

Next, Chef Duncan prepares and introduces the colorful accompaniments. A light and refreshing mung bean salad adds crunch and freshness, while Russian-style carrots provide a slightly sweet, tangy, and seasoned element. Sliced red peppers and cucumbers add crispness and vibrant color, while pickled red onions contribute acidity that balances the richness of the tuna and creamy avocado.

Fresh avocado is sliced just before serving to preserve its beautiful color and smooth texture. Fava beans add an earthy flavor and another layer of color and substance to the bowl.

For contrasting textures, Chef Duncan prepares crispy sweet potatoes, golden on the outside and tender inside, adding a touch of natural sweetness. Fried wonton strips provide a light and delicate crunch.

To assemble the poke bowl, Chef Duncan arranges the marinated tuna as the centerpiece and places the mung bean salad, Russian carrots, red peppers, pickled onions, avocado, cucumbers, fava beans, and crispy sweet potatoes around it in colorful sections.

For the finishing touch, Chef Duncan drizzles a Sweet Thai aioli over the bowl, adding a creamy, sweet, slightly spicy flavor that brings all of the ingredients together. A generous scattering of crispy fried wonton strips completes the presentation and adds the final crunch.

Throughout the demonstration, Chef Duncan will share professional tips and techniques, highlighting knife skills, ingredient freshness, proper handling of raw tuna, flavor balance, texture, and presentation.

The finished Marinated Tuna Poke Bowl delivers layers of savory, sweet, tangy, creamy, fresh, spicy, and crispy flavors and textures, finished with a vibrant Sweet Thai aioli drizzle for a colorful and beautifully presented dish.
