Description

The Nella 35-Pan Insulated Heated Proofer Cabinet is an essential equipment for commercial bakeries, restaurants, and catering operations. It creates an ideal warm and humid environment, crucial for activating yeast and achieving the perfect rise in baked goods before baking. This unit is designed to accommodate high volumes, ensuring consistent results for different breads, pastries, and other dough-based products.

Built with a 30mm thick aluminum insulated cabinet, this proofer maintains stable internal temperatures, contributing to energy efficiency and uniform proofing. Its durable construction also makes it easy to clean, supporting hygienic operations. An accessible control panel features an LED temperature display, allowing operators to monitor and adjust settings with accuracy.

The cabinet effectively holds up to 35 full-size (18″ x 26″) pans, maximizing throughput for busy kitchens. To manage humidity, the unit is equipped with a drip pan and an internal water pan. While the main cabinet provides the insulated environment, the electrical control box, which supplies power and control, is sold separately.

Restaurant Size Recommendations
Suitable for medium to high-volume commercial bakeries, large restaurants with dedicated baking operations, or catering companies that frequently prepare a wide range of dough products. Its generous capacity supports consistent production for establishments requiring efficient and controlled dough proofing.

Maintenance Advice
Clean the interior and drip pan daily to prevent residue buildup and ensure hygiene. Periodically inspect door seals for wear to maintain temperature and humidity consistency. Ensure the internal water pan is clean and filled as needed for optimal humidity during proofing.
