GLOBAL GS Series
Knife with sheared blade in special CROMOVA 18 molybdenum-vanadium steel, with a hardness level of 56-58 HRC (Rockwell scale). The stainless steel handle is hollow and filled with sand for perfect knife balance. The blade is hand sharpened for excellent edge retention. The GS series is characterized by a “triangular” shaped handle which is better suited to a user with small hands – such as women – and shorter blades than the G series. The GLOBAL GS knives are excellent for peeling and cutting vegetables and fruit , processing fish and shellfish.
