Here, the Blue #2 core is clad in Japan with 48 layers of Japanese Damascusso the entire blade steel comes from the Japanese factoryadding toughness, stability, and corrosion resistance while showcasing beautiful patterning. Youll feel clean, effortless cuts, crisp tip control, and lively feedback. Its true Japan-steel performance and craftsmanship at a fraction of the typical big-brand price. Xinzuo only imports the best steels for their top-tier knives.

Ive had the 5.5″ Santoku in my kitchen for about six months. I didnt baby itno rushing to washbecause I wanted to see how the edge would patina. With lazy care, it darkened pretty fast and has mostly settled. I know some folks love that old-world high-carbon look;

Im not a huge fan because it can get blotchy. What surprised me is how great the Damascus looks next to that gray edgeit really shows where the Damascus ends, and the Aogami steel cutting edge starts making the Damascus really stand out

In my kitchen, at least half of the knives have the octagonal handle design. I find them very comfortable and easy to use for long periods of time. Rob-The Bamboo Guy
